Cauliflower Rice

Cauliflower rice makes a great healthy side dish.  I like the Green Giant cauliflower rice blend – it makes this recipe a little more colorful.
Servings: 8
Time: 10 minutes
1 lb cauliflower rice
1 1/2 Tbsp olive oil
1/2 tsp salt
1/2 tsp garlic powder
1/4 tsp pepper
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the cauliflower rice, salt, garlic, and pepper.
  3. Let cook for 5-8 minutes, stirring occasionally.
  4. Serve as a vegetable side or as a substitute for rice.
