Roasted Cauliflower

Cauliflower roasted in olive oil with garlic, salt and pepper – easy and delicious!

This healthy side dish goes well with most any entree. It goes especially well with grilled salmon or grilled chicken.

Roasted Cauliflower

12 ounces cauliflower (about 1 head), cut into bite-sized pieces
3 Tbsp olive oil
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder

  1. Preheat the oven to 425F.
  2. In a medium bowl, combine all of the ingredients. Mix until everything is well incorporated.
  3. Prepare a baking sheet with cooking spray. Spread the cauliflower on the baking sheet in a single layer.
  4. Bake for 15-20 minutes, until the cauliflower is slightly blackened. Garnish with parsley, if desired.
